OK. I have mine and an honest review. First, the pro vs. non-pro. The settings change the speed of the drum. Slower speeds mean the liquid has more time to get colder and stick to the surface of the drum. To be honest, 5 minutes gave a bowl of ice that worked very nice for shaved ice in multiple formats regardless of setting. Slower speeds might give a courser texture.
